Emily Embleton

She / They

Outreach Specialist

Emily was born and raised outside of Denver, Colorado, where she enjoyed both the natural beauty of the area and the vibrant arts scene. Emily attended the Denver School of the Arts, where she studied theater intensively. During high school, Emily had the opportunity to travel to the Amazon Basin to work on a locally-led water infrastructure and women’s shelter project. This transformative experience sparked her passion for cross-cultural community building and hands-on advocacy, a passion that has guided her ever since.

With this deep sense of care and service, Emily went on to graduate from Willamette University in Salem, Oregon, with a B.A. in Politics, Policy, Law, and Ethics, and a minor in Sustainability. Her academic focus centered on justice and sociology, particularly related to Indigenous rights, land revitalization, and food sovereignty.

Emily has developed a deep connection to rural Oregon, having lived and worked in Coos Bay and Florence before settling in Ashland. While on the Oregon Coast, she became involved in disaster preparedness and community resilience efforts, serving as the Emergency Management Communications Analyst for the City of Florence through the AmeriCorps RARE (Resource Assistance for Rural Environments) program. She is excited to bring this foundational knowledge to her work with Rogue Food Unites, where she is serving for her second year with AmeriCorps RARE. Emily is honored to contribute to the organization's mission of feeding, preparing, and healing the Rogue Valley through whatever challenges may come our way.

Outside of work, Emily is an avid hiker, yogi, and road-tripper who loves exploring the outdoors, especially along the stunning Oregon Coast. When she’s not adventuring, she enjoys cuddling with her cats, attending live shows, and catching up with friends over the phone.
